Ingredients

cup Flour
½ cup Sugar*
2 teaspoons Baking powder
½ teaspoon Baking soda
½ teaspoon Lite salt
1 teaspoon Cinnamon
½ cup Egg Beaters
1 cup Canned pumpkin
1 cup Raisin Bran or Shredded Bran Flake cereal
¾ cup Skim milk
½ cup Light corn syrup

Directions

*Or ¼ cup sugar and 3 packets Sweet 'n Low. Spray 12 muffin cups with nonstick spray. In a medium bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon. In a large bowl, using a wire whisk, beat Egg Beaters. Stir in pumpkin, cereal, milk and corn syrip. Add to flour mixture; stir until well blended. Spoon into prepared muffin cups. Bake at 400F. 18-20 minutes. Cool in pan 5 minutes. Per sugar serving: 153 cal., 0.7g fat (4%), 0mg chol., 2g fiber, 4g pro., 38g carb., 168mg sod. Per S&L serving: 137 cal., 34g carb.
