Queso fundido with sausage and chipotle chiles

½ | pounds | Hot italian sausage |
1¾ | cup | Onion; chopped |
1 | cup | Fresh cilantro; chopped |
2 | teaspoons | Canned chipotle chiles; chopped |
10 | ounces | Monterey jack cheese; grated |
12 | smalls | Flour tortillas |
Directions
1. Preheat oven to 350 degrees. 2. Remove casings from the sausage and saute with the onion in a large skillet, breaking up the sausage into small pieces with the back of a spoon. Cook about 10 minutes.
3. Mix in ½ cup cilantro and 1 teaspoon chipotle chiles.
4. Transfer mixture to a 9 inch baking dish.
5. Combine remaining cilantro, grated cheese and remaining chipotles in a medium bowl.
6. Sprinkle cheese mixture over sausage mixture and bake for 10-15 minutes Notes: We make this often at our house since we discovered the recipe. It's quick and easy to make and very tasty. Roll up in warm flour tortillas with sour cream and salsa.
