Quick bean salad with tuna

7 | ounces | (198g) can of solid light |
Tuna, drained | ||
19 | ounces | (540ml) romano beans, rinsed |
And drained | ||
½ | cup | Thinly sliced or diced red |
Onion | ||
2 | Italian plum tomatoes in | |
Wedges | ||
½ | cup | Sliced black olives |
2 | tablespoons | Lemon juice |
2 | tablespoons | Fresh parsley,finely chopped |
1 | tablespoon | Olive oil |
Directions
Break up tuna fish and combine with beans, onions, tomatoes and olives. In separate bowl whisk together lemon juice, parsley and oil.
Pour over mixture. Toss to coat and serve. Additional oil and lemon juice may be added if desired. Source: The Toronto Star Newspaper, July 30th, 1996.
