Three-bean and tuna salad

Ingredients

Quantity Ingredient
15 ounces Cannellini beans; rinsed and drained
15 ounces Great northern beans; rinsed and drained
15 ounces Kidney beans; rinsed and drained
1 large Bell pepper; chopped
1 medium Onion; chopped
¼ cup Fresh parsley; chopped
¼ cup Olive or vegetable oil
2 tablespoons Lemon juice
2 tablespoons Capers
¼ teaspoon Red pepper sauce
Lettuce leaves
6⅛ ounce Tuna in water; drained
Lemon wedges; if desired

Directions

Mix beans, bell pepper, onion and parsley. Shake oil, lemon juice, capers and pepper sauce in tightly covered container. Toss oil mixture and bean mixture. Spoon onto lettuce. Top with tuna. Serve with lemon wedges.
