Quick-fired steaks with anchovy-pepper dressing

6 | Anchovies in olive oil; finely chopped | |

12 | 50 g thinly sliced fillet steaks | |
2 | tablespoons | Finely chopped fresh parsley |
Green salad to serve |
Directions
1 Place the oil, vinegar, anchovies and pepper in a small pan and simmer gently for 2-3 minutes on the side of the barbie.
2 Season and cook the steaks over very hot coals or in a preheated griddle pan for 30 seconds on each side, then transfer to serving plates. Stir the parsley into the dressing and pour over the steaks. Serve with a green salad.
