Quinoa and nut dressing

cup Cooked quinoa
2 tablespoons Walnuts or pecans
Finely chopped
2 tablespoons Hazelnuts
Finely chopped
2 tablespoons Pistachio nuts
Finely chopped
2 Mint leaves, minced
cup Extra-virgin olive oil
3 tablespoons Lemon juice
1 teaspoon Black pepper

Directions

Combine all the ingredients in a mixing bowl and let stand until ready to use as a stuffing or side dish.
