Raisin-bran muffins - country living

2 | cups | Oat-bran cereal flakes |
½ | cup | Vegetable oil |
½ | cup | (1 %) lowfat milk |
½ | cup | Thawed frozen white grape juice concentrate |
1 | large | Egg |
¾ | cup | Unsifted all-purpose flour |
¾ | cup | Whole-wheat flour |
1 | tablespoon | Baking powder |
1 | teaspoon | Ground cinnamon |
½ | teaspoon | Salt |
1 | cup | Dark seedless raisins |
Grape Spread (opt., separate recipe) |
Directions
1. Heat oven to 400'F. Grease nine 3 inch muffin-pan cups.
2. In large bowl, stir together cereal flakes, oil, milk, undiluted grape-juice concentrate, and egg until blended.
3. In small bowl, combine the flours, baking powder, cinnamon, and salt. Stir in raisins. Stir dry ingredients into cereal mixture just until moistened. Spoon mixture into greased muffin-pan cups.
4. Bake 15 to 18 minutes or until centers spring back when lightly pressed with fingertip. Meanwhile, prepare Grape Spread, if desired.
Cool muffins in pan on wire rack 5 minutes. Remove muffins from pan and serve wann with Grape Spread, if desired.
