Red and green pepper salad

Ingredients

Quantity Ingredient
2 Green peppers
1 Red pepper
4 ounces Cheddar cheese; grated
2 tablespoons Gherkins; diced
2 larges Tomatoes; skinned and finely
; chopped
3 tablespoons Mayonnaise
Salt and pepper
Lettuce

Directions

Cut a slice from the stalk end of the green peppers and remove the seeds.

Chop the red pepper finely. Mix with the cheese, gherkins, chopped tomatoes and mayonnaise.

Spoon the mixture into the green peppers and chill for a while. Cut the peppers into slices and arrange on a bed of lettuce.
