Red onion confire

Ingredients

Quantity Ingredient
1 pounds Red onion; julienned
1 teaspoon Unsalted butter
¼ cup Honey
¼ cup Brown sugar
¾ ounce Red wine vinegar
¾ ounce Red wine
TT kosher salt
TT pepper

Directions

1. Heat butter over high heat, add onions and sweat them.

2. In a seperate pan, Combine sugar & honey. Cook until lightly caramelized.

3. Add vinegar and wine, reduce.

4. Add onions and cook until thick.

5. Adjust seasoning to taste.

Serving Ideas : Serve with Steak instead of Steak Sauce.

NOTES : YIELD: 8oz Portion
