3 | mediums | Red potatoes -- scubbed |
1 | bunch | Green onion -- chopped |
10 | ounces | Frozen peas |
2 | teaspoons | Margarine |
½ | teaspoon | Fresh ground pepper |
2 | tablespoons | Fresh mint -- chopped |
Directions
Cut potatoes into ¾" pieces. Place potatoes and onions in a saucepan, barely cover with water and bring to boil. Simmer until just tender. add peas, cover and cook for 1 minute. Drain, add margarine, pepper and mint. Toss gently and heat for 1 minute more.
