Roasted tomato and pepper salad

Ingredients

Quantity Ingredient
2 Garlic Cloves, minced
1 Chili Pepper, seeded
& chopped
cup Olive Oil
2 tablespoons Lemon Juice
2 tablespoons White Wine Vinegar
Salt to taste
2 larges Tomatoes
2 larges Yellow Bell Peppers

Directions

Mix first 6 ingredients. Set aside. Place tomatoes and peppers over flame or under broiler until their skins char and blister. About 20 seconds a side for tomatoes, 2 minutes for the peppers. Remove stem and seed from the peppers. Slice tomatoes and peppers and toss in the dressing. Chill. Submitted By BILL CONNORS On 05-17-95
