Tomato and hot red pepper salad

4 larges Ripe tomatoes; peeled, seeded and
; diced
4 Red peppers; roasted, peeled,
; seeded and diced
1 Cucumber; peeled, seeded and
; diced
1 teaspoon Chilli peppers; seeded and chopped
1 tablespoon Lemon juice
2 tablespoons Extra virgin olive oil; (2 to 3)
2 tablespoons Flat leaf parsley; chopped
¼ teaspoon Ground cumin
2 Cloves garlic; peeled and chopped

Directions

Combine all ingredients in a mixing bowl and toss them together.

Refrigerate for at least an hour before serving.
