Saigonnais crabmeat noodles

2 | tablespoons | Extra-virgin olive oil |

1 | can | (6 oz) crabmeat, drained |
⅓ | cup | Cilantro, chopped |
Directions
1. Bring a medium saucepan of water to a rolling boil over high heat.
Stir in the noodles and remove from the heat. Use 2 forks to stir and separate the noodles, then let them soak for 5 min until softened and bright white. Drain and place on a cutting board in a log-shaped pile. Cut crosswise into 2-inch lengths; you'll have about 2½ cups.
2. Meanwhile, chop the garlic, In a large frying pan over medium heat, combine the oil and garlic and cook, stirring often, about 2 min.
Increase the heat to medium-high and add the noodles, salt and pepper. Cook, stirring often, 4-5 min, until the noodles are tender but still firm. Add the crabmeat, cilantro and additional pepper and toss well.
