1 pounds Carrots
cup Vegetable oil
2 tablespoons Vinegar or lemon juice
3 tablespoons Minced parsley
2 Garlic cloves minced
Salt and pepper to taste
¼ teaspoon Sugar optional

Directions

Peel the carrots and grate them fine. Mix the oil and lemon juice together, add the carrots, parsley and garlic. Season with salt and pepper.
