Sauerkraut rice for a crowd

Ingredients

Quantity Ingredient
4 quarts Sauerkraut, drained
6 cups Long grain rice
3 pounds Lean ground beef or bacon
2 pounds Butter or margarine
4 cups Chopped onions
3 cups Chopped celery
4 cups Chicken broth
½ teaspoon Pepper
Salt and pepper to taste

Directions

Boil and drain sauerkraut. Cook rice, rinse with hot water and drain.

Brown beef or fry bacon, draining fat. Saute in butter, the onions and celery. In large pot, mix all ingredients together and place in large roasters or casserole dishes and bake in 350F oven for 1-½ hours.
