Scotch cutlets (aunt b's)

4 | ounces | Oatmeal |
1 | ounce | Flour |
½ | teaspoon | Salt |
2 | ounces | Margarine |
1 | Dessertspoonful chopped leek | |
Parsley | ||
Milk | ||
Egg and breadcrumbs |
Directions
Mix oatmeal with flour,leeks and salt.Stir in half a teaspoonful chopped parsley if likedk.Melt margarine and add with milk to make a soft mixture.Leave to swell and become firm. Shape into cutlets and coat with egg and breadcrumbs.Fry in smoking hot fat until golden brown.Drain and serve on a mound of mashed potatoes with mixed vegetables.Serve very hot.
