Chopped in 1/4inch dice | ||
¼ | cup | Lime juice |
¼ | pounds | Tomatillos, husks removed |
And diced | ||
1 | bunch | Green onions, sliced |
4 | Jalapenos, seeded and | |
Chopped | ||
1 | Clove garlic, peeled | |
1 | bunch | Cilantro leaves, chopped |
1 | small | Avocado, peeled and pit |
Removed | ||
1 | teaspoon | Sea salt |
½ | teaspoon | Freshly ground black pepper |
Directions
Marinate the shrimp in the lime juice for one hour. Drain and reserve the juice. In a large bowl combine the shrimp, tomatillos, green onions, jalapenos, garlic, cilantro, avocados, salt and pepper and toss to coat.
Serve immediately.
Yield: 4 to 6 servings
