Skate with black butter and capers

2 tablespoons Clarified butter
1 Portion sized skate wing; skin removed
Plain flour
2 tablespoons Butter
1 tablespoon Capers
2 tablespoons Red wine vinegar
1 tablespoon Parsley; chopped

Directions

Heat the butter in a frying pan. Dust the skate with flour and season. Fry the skate until cooked.

Tip out the butter and add the next lot. When black add the capers and vinegar and parsley. Serve.
