Skillet cabbage, onions and peppers

½ cup Red; yellow, green bell
; peppers
1 Onion
2 Bacon slices
3 tablespoons White vinegar
1 tablespoon Vegetable oil
1 tablespoon Water
1 tablespoon Brown sugar
1 teaspoon Dijon mustard
½ teaspoon Salt and pepper

Directions

Cut peppers into strips, chop onion and cut bacon into pieces. Cook bacon in large skillet until crisp. Add peppers, onion and cabbage and toss gently. Combine vinegar and next 6 ingredients. Mix well and add to vegetable mixture. Bring to a boil, cover, reduce heat and simmer 8 minutes or until cabbage is tender, stirring occasionally. Yield: 4 servings.
