Smoked ham and calendula roll-ups

Ingredients

Quantity Ingredient
1 pack Cream cheese; 8 oz
2 tablespoons Mayonnaise; low-fat
1 tablespoon Horseradish
3 teaspoons Lemon juice
2 tablespoons Sweet pickle relish
1 Apple; tart, cored, peeled,
. & finely diced
1 cup Calendula petals; washed
4 Flour tortillas; 12-inch
8 ounces Smoked ham; wafer-thin slice
Lettuce leaves
Calendula petals for garnish

Directions

Blend the cream cheese with the mayonnaise, horseradish, lemon juice and pickle relish in a bowl.

Gently stir in the apple and calendula petals.

Using a spatula, spread the mixture evenly over the entire surface of each tortilla.

Cover with a single layer of ham. Roll up, jely-roll style.

Tightly wrap each in plastic wrap and chill until serving time.

To serve, cut roll-ups to desired thickness.

Arrange on a serving platter over a bed of lettuce leaves. Sprinkle with additional calendula petals.
