Spambalaya jambalaya

Ingredients

Quantity Ingredient
1 can Spam, cubed
1 cup Chopped onion
cup Chopped green pepper
½ cup Chopped celery
2 eaches Clove garlic, minced
1 can Stewed tomatoes, 14-1/2 oz can
1 can Chicken broth
½ teaspoon Dried leaf tyme
6 eaches Dr hot pepper sauce
2 eaches Bay leaves
1 cup Rice
2 tablespoons Chopped parsley

Directions

In large non stick skillet or 3-quart non-stick saucepan, saute spam luncheon meat, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce and bay leaves. Bring to a boil; stir in rice. Cover.

Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
