Spiced pork meatballs in tomato and coriander sauce

15 millilitres Fresh coriander; chopped (1tbsp)
½ medium Onion; peeled and finely

55 grams Fresh white breadcrumbs; (2oz)
millilitre Each ground coriander and ground cumin; (1/2tsp)
Salt and pepper
25 grams Plain flour; (1oz)
15 millilitres Olive or sunflower oil; (1tbsp)
30 millilitres Olive oil; (2tbsp)
1 small Onion; peeled and chopped
1 400 g can Waitrose Italian Tomatoes; roughly chopped
millilitre Each ground coriander and paprika; (1/2tsp)
15 millilitres Fresh coriander; chopped (1tbsp)
Salt and pepper

THE SAUCE

To make the meatballs, place all the ingredients, except the flour and oil, into a bowl and thoroughly mix. Sprinkle a little flour onto the work surface, make 16 balls with the meat mixture and roll them in flour.

Heat the oil and gently fry the meatballs for about 6-8 minutes or until brown. Transfer to a warm plate.

To make the sauce, place the olive oil and onion in a pan and cook until the onion is soft. Add the tomatoes with their juices and the remaining ingredients and simmer for 3-4 minutes.

Place the meatballs in the sauce and continue simmering for a further 4-5 minutes or until thoroughly cooked and there is no pink meat. If the sauce is too thick, add a little water.

Serve immediately.

NOTES : Meatballs in a spicy tomato sauce make a delicious family lunch or supper dish - you can adjust the amount of spice to suit your family's taste. Serve the meatballs with creamy mashed potato or pasta, and a watercress salad.
