Spiced red cabbage with apples and thyme - bon appetit

2 | pounds | Red cabbage, cored, shredded |
1 | pounds | Tart green apples (such as Granny Smith), peeled, cored, finely chopped |
1 | large | Onion, finely chopped |
½ | cup | Dry red wine |
½ | cup | Orange juice |
2 | tablespoons | Red wine vinegar |
2 | tablespoons | Firmly packed dark brown sugar |
2 | Garlic cloves, chopped | |
1 | tablespoon | Grated orange peel |
1 | teaspoon | Dried thyme |
¼ | teaspoon | Ground cinnamon |
¼ | teaspoon | Ground nutmeg |
¼ | teaspoon | Ground allspice |
Directions
Preheat oven to 400'F. Place all ingredients in heavy large ovenproof Dutch oven. Cover; bake until cabbage is tender, about 1 hour.
Transfer Dutch oven to stovetop, uncover and boil until juices thicken slightly, about 5 minutes. Season to taste with salt and pepper.
