Spicy bean curd with minced beef

3 | tablespoons | Oil |
4 | ounces | Lean beef -- minced |
1 | tablespoon | Salted black beans |
1 | tablespoon | Chili paste |
1 | tablespoon | Salted soy beans |
1 | tablespoon | Ginger root -- very finely chopped |
1 | teaspoon | Garlic -- very finely chopped |
3 | Green onion -- finely sliced | |
1 | cup | Chicken or beef stock |
1 | tablespoon | Black soy sauce |
½ | teaspoon | Salt |
2 | teaspoons | Cornstarch -- blended with water |
1 | teaspoon | Powdered sichuan |

Directions
Cut the bean curd in ¾" dice. Heat oil and stir fry beef and black beans for 3 to 4 minutes. Add chili paste, salted soy beans, ginger, garlic and green onions. Stir fry for another 2 minutes, then add the stock and bean curd. Simmer for 5 minutes, season with soy sauce and salt, then thicken with cornstarch. Sprinkle with sichuan pepper and serve.
