Spinach balls with mustard dip

1 Servings

Ingredients

Quantity Ingredient
1 pounds Lean ground turkey
1 pack (9-oz) frozen spinach; thawed, well drained
¼ cup Plain bread crumbs
¼ cup Finely chopped onion
½ teaspoon Garlic powder
½ teaspoon Salt; if desired
¼ cup Refrigerated or frozen fat-free egg product; thawed
1 Bottle; (12-oz) creamy mustard-mayonnaise sauce*

Directions

Here's a really delicious meatball recipe. It's from the Jan/Feb 1998 issue of "Fast and Healthy" magazine. We don't always use the mustard dip, but just serve them over some buttered pasta.

1) In medium bowl, combine turkey, spinach, bread crumbs, onion, garlic powder, salt, egg product and 2 Tbls. of the mustard-mayonnaise sauce; mix well. Shape into about 45 (1-inch) balls.

2) Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add spinach balls; cover and cook 8 to 10 minutes or until spinach balls are firm and centers are no longer pink, turning occasionally. Keep warm.

3) Pour remaining mustard-mayonnaise sauce into small microwave-safe serving bowl. Microwave on HIGH for 1½ to 2 minutes or until thoroughly heated. Stir sauce. Serve hot spinach balls with sauce.
