lightly boil spinach until wilted bright green. (do not over cook.) 2.
Drain and refresh spinach under running cold water. Squeeze out excess water with hands as much as possible. 3. Trim roots from stem end and cut remaining leaves into 2 inch lengths. 4. Roast sesame seed over medium-high heat. To make sesame paste, crush sesame seed in a suribachi or food processor. Add sugar and continue to grind until quite pasty. 5. And then blend soy sauce well. 6. Combine together spinach and sesame dressing. Serve chill. When using a blender, you'll need to double the quantities in order to have enough volume to engage the blades of the blender.
