Spinach-citrus salad^

5 | cups | Torn fresh spinach |
Directions
In shallow bowl, combine mandarin orange segments and onion rings.
Add red wine vinegar and sugar; mix gently. Sprinkle with sesame seed. Cover; refrigerate until serving time to blend flavors. Just before serving, place spinach in medium bowl. Add orange mixture; toss to coat. 6 (1 cup) servings.
Per serving: 60 calories, 2 g protein, 12 g carbohydrate, 2 g fiber, 1 g fat (15%), 0 mg cholesterol, 40 mg sodium, 360 mg potassium, 1 vegetable and ½ fruit exchange.
