Early in day: Cut out core from large, firm head of lettuce. Wash lettuce; drain; then put in crisper to chill, along with some radishes and scallions. Open up bunch of water cress; wash well; then refrigerate in covered jar. At suppertime: Cut lettuce into wedges; arrange in salad bowl as pictured. Slice some radishes and snip some scallions over lettuce wedges. Tuck in water cress. Set bowl on table, along with cruets of vinegar and salad oil. Each person drizzles on his own dressing and adds freshly ground pepper.
