Stir-fried quorn with chinese blackbeans and spring onion

Ingredients

2 tablespoons Vegetable oil
1 small Red onion; sliced
1 Red pepper; sliced
1 Garlic clove; crushed
1 Fresh chilli; finely sliced

1 pack Quorn pieces; 300g
1 bunch Spring onions; cut into 1 1/2 inch
; lengths
2 tablespoons Prepared Chinese black bean sauce
1 tablespoon Dry sherry
1 teaspoon Sugar
1 teaspoon Cornflour
8 tablespoons Water

Directions

SAUCE

Heat the oil in a large wok or frying pan over high heat. Add the red onion, and pepper and stir fry for 1 minute.

Now add the garlic, chilli and Quorn pieces and cook for a further 3-4 minutes until the Quorn pieces have taken a light golden colour.

Add the spring onions and cook for 1 minute more.

Add the sauce ingredients, allow it to come to the boil and thicken slightly.

Serve immediately on rice or noodles.
