Stir-fried quorn with chinese blackbeans and spring onion

1 | small | Red onion; sliced |
1 | Red pepper; sliced | |
1 | Garlic clove; crushed | |
1 | Fresh chilli; finely sliced | |

1 | pack | Quorn pieces; 300g |
1 | bunch | Spring onions; cut into 1 1/2 inch |

2 | tablespoons | Prepared Chinese black bean sauce |
1 | tablespoon | Dry sherry |
1 | teaspoon | Sugar |
1 | teaspoon | Cornflour |
8 | tablespoons | Water |
Directions
SAUCE
Heat the oil in a large wok or frying pan over high heat. Add the red onion, and pepper and stir fry for 1 minute.
Now add the garlic, chilli and Quorn pieces and cook for a further 3-4 minutes until the Quorn pieces have taken a light golden colour.
Add the spring onions and cook for 1 minute more.
Add the sauce ingredients, allow it to come to the boil and thicken slightly.
Serve immediately on rice or noodles.
