Stir-fried spinach with ginger and almonds

Ingredients

½ tablespoon Miso
1 tablespoon Soy sauce
½ teaspoon Vinegar, wine
¼ teaspoon Oil, sesame
1 tablespoon Almonds, sliced
½ tablespoon Oil, peanut
¼ teaspoon Ginger, ground
1 pounds Spinach, fresh

Directions

Trim, wash, and drain spinach. Cut into 1" to 2" widths. Mix miso, soy sauce, vinegar, and sesame oil; set aside.

Heat wok over high heat. Add almonds and stir-fry until fragrant and edges turn golden, about 45 seconds. Transfer to plate.

Heat peanut oil in wok. Add spinach and ginger and stir-fry just until tender, about 3 minutes. Drizzle with bean mixture. Serve immediately!
