Summer squash with parmesan cheese (microwave)

Ingredients

Quantity Ingredient
2 eaches Chopped shallots
pounds Summer squash; skinned, seeded, and cubed
3 tablespoons Butter
Salt & pepper
3 tablespoons Parmesan cheese; grated

Directions

Put the shallots in a casserole dish. Cover and microwave on high for 3 minutes.

Add the squash and ¼ cup water. Cover and microwave on high for 10 minutes.

Put the butter in a bowl and melt for 1 minute on high. Sprinkle with salt and pepper and pour over the squash. Add the Parmesan and stir well.
