Zucchini with parmesan cheese (microwave)

Ingredients

Quantity Ingredient
pounds Very thinly sliced zucchini
1 each Lemon; squeezed for juice
3 tablespoons Roast chicken cooking liquid or chicken stock
tablespoon Garlic powder
Salt & pepper
2 tablespoons Butter
¼ cup Grated Parmesan cheese

Directions

Put the zucchini in a dish and pour the lemon juice and the chicken cooking juice (or stock) over. Sprinkle with garlic powder and season with salt and pepper. Cover and microwave on HIGH for 8 minutes. Leave to stand for 3 minutes.

Transfer the zucchini to a serving dish. Add the butter and Parmesan cheese. Stir and serve hot.

Note: The author recommends serving this dish with Roast Chicken, but notes that it is good with (and can use the juices of) any roast meat.
