Zucchini with parmesan cheese (microwave)

Ingredients

1¾ | pounds | Very thinly sliced zucchini |
1 | each | Lemon; squeezed for juice |
3 | tablespoons | Roast chicken cooking liquid or chicken stock |
1½ | tablespoon | Garlic powder |
Salt & pepper | ||
2 | tablespoons | Butter |
¼ | cup | Grated Parmesan cheese |
Directions
Put the zucchini in a dish and pour the lemon juice and the chicken cooking juice (or stock) over. Sprinkle with garlic powder and season with salt and pepper. Cover and microwave on HIGH for 8 minutes. Leave to stand for 3 minutes.
Transfer the zucchini to a serving dish. Add the butter and Parmesan cheese. Stir and serve hot.
Note: The author recommends serving this dish with Roast Chicken, but notes that it is good with (and can use the juices of) any roast meat.
