Super-easy chocolate mousse

Ingredients

Quantity Ingredient
10½ ounce Silken tofu, extra-firm, drained & crumbled
¾ cup Semi-sweet chocolate chips
1 teaspoon Vanilla extract

Directions

Blend tofu until smooth.

Melt chocolate over medium heat in a pot placed in a larger pot filled with water. Blend chocolate & vanilla into tofu until there is no white visible. Spoon evenly into 4 parfait glasses or wine goblets & chill for at least 1 hour before serving.
