Sweet potato - carrot puff

Ingredients

¼ | cup | Chopped onion |
2 | tablespoons | Butter or margarine |
2 | cans | (16 Oz.) sweet potatoes drained |
1 | can | (16 Oz.) diced carrots; drained |
1 | pack | (3 Oz.) cream cheese; softened |
2 | Eggs | |
1 | teaspoon | Salt |
¼ | teaspoon | Nutmeg |
⅛ | teaspoon | White pepper |
Directions
Cook onion in butter until tender. In mixer bowl, beat sweet potatoes and carrots until smooth; add remaining ingredients and beat at medium speed until fluffy. Stir in onions. Turn into a 1½ quart casserole and bake, uncovered, for 45 minutes or until bubbly.
Garnish with apple slices, if desired. Serves 8.
