Swordfish with tomato basil relish

Ingredients

4 | 8-10 ounce swordfish steaks | |
1 | cup | Fresh tomatoes; diced |
1 | teaspoon | Red wine vinegar |
1 | tablespoon | Vegetable oil |
1 | tablespoon | Fresh chopped basil |
½ | teaspoon | Fresh minced garlic |
½ | teaspoon | Salt |
¼ | teaspoon | Black pepper |
Directions
PREPARATION: 1) Cook fish on a well oiled grill 4-5 minutes each side. 2) Mix remaining ingredients. 3) Heat in a sauce pan over low or microwave until all ingredients are warmed through. 4) Do not cook tomato mixture or else it will become mushy and lose its fresh flavor.
Suggested Wine: Amber Ale or White Grenache NOTES : A wild rice mixture will be excellent with this dish. For a different edge try cilantro instead of basil.
