Texas stir-fry

1 | Red onion; thinly sliced | |
1 | Sweet red bell pepper | |
1 | Rib bed and cut into 2x2 inch strips. | |
½ | cup | Frozen corn kernels |
1 | medium | Size clove garlic; finely chopped |
1 | tablespoon | Lime juice |
2 | teaspoons | Chili powder |
1 | dash | Dried cilantro |
½ | cup | Canned black beans |
Salt and freshly ground pepper to taste |
Directions
In a medium frying pan over medium high heat, cook the onion in the olive oil for 1 minute. Add the bell pepper, corn, garlic, lime juice, chili powder, cilantro, salt and pepper. Stir and cook Until vegetables are crisp-tender. Stir in ½ cup canned black beans. Stir until hot. Serve warm.
