Three veggies and cheese

Ingredients

Quantity Ingredient
2 cups Cauliflower florets
2 cups Broccoli florets (or stalk, sliced into sticks)
2 cups Carrots, cut into matchsticks
1 cup Calorie reduced swiss, mozzarella, cheddar, or combo
cup Skim milk
1 tablespoon Margarine
1 tablespoon Flour
½ teaspoon Italian seasoning (or basil, rosemary, thyme combo)

Directions

Make a white sauce by melting the margarine in saucepan. Add flour, and then gradually add the milk until completely mixed. Heat slowly until thickend. Add grated cheese and italian seasoning and set aside. Meanwhile, steam vegetables. Spray a casserole dish with Pam, and then toss the veggies together until mixed. Arrange in casserole dish, pour cheese sauce over top and bake in 350F oven for about 20 minutes, just until the cheese sauce melts down and around the veggies. (can also zap it in the microwave.)
