Summer vegetables and cheese

1 | small | Onion -- thinly sliced |
2 | tablespoons | Cooking oil |
2 | mediums | Zucchini -- sliced |
2 | mediums | Yellow squash -- sliced |
3 | mediums | Tomatoes -- diced |
8 | ounces | Mozzarella cheese -- grated |
Directions
Saute onion with oil in large skillet or wok. Cook until clear. Add zucchini and yellow squash and cook until just tender. Add tomatoes and cheese and cook until cheese has just melted. Serve immediately.
