Summer vegetables and cheese

Ingredients

Quantity Ingredient
1 small Onion -- thinly sliced
2 tablespoons Cooking oil
2 mediums Zucchini -- sliced
2 mediums Yellow squash -- sliced
3 mediums Tomatoes -- diced
8 ounces Mozzarella cheese -- grated

Directions

Saute onion with oil in large skillet or wok. Cook until clear. Add zucchini and yellow squash and cook until just tender. Add tomatoes and cheese and cook until cheese has just melted. Serve immediately.
