Tofu mayonnaise (cholesterol and oil free)

Ingredients

2 | Boxes; (10 oz) of silken tofu (soft or firm to your taste) | |
2 | smalls | Cloves of garlic; minced |
2 | tablespoons | Cider vinegar |
1 | teaspoon | Salt |
2 | teaspoons | Dry mustard; (or to your taste) |
Directions
This dressing isn't fatfree, but very low fat and delicious. I make my mayonnaise from tofu and find the following recipt very tasty. I use it on sandwiches all the time.
Place all ingredients in a blender and whip til smooth. Depending on your blender, you might need to do this in two batches.
The real test for this mayo was when I served it to my mayo officionado daughter for her artichoke. She loved it.
