Tomato, pepper, and sausage appetizer

Ingredients

Quantity Ingredient
1 teaspoon Canola oil;
cup Garlic; finely shopped
2 tablespoons Hungarian paprika
3 mediums Green peppers; seeded cut into 1/2 inch strips
2 mediums Red peppers; seeded cut into 1/2 inch strips
cup Tomatoes; peeled seeded, and finely chopped
½ teaspoon Salt; (OPTIONAL)
Freshly ground black pepper; to taste
3 ounces Sausage; cut into thin slices

Directions

KOLASZOS LECSO

In a 2-quart saucepan heat oil. Add onions and garlic. Saute, over low heat or until or until onions are golden, about 7 to 10 minutes.

Remove pan from heat and stir in the paprika. Add the green and red pepper strips, chopped tomatoes, salt and pepper. If the vegetables are not completely covered, add enough of the tomato puree to cover them. Cover saucepan and return to medium heat. Let simmer for 10 minutes over medium heat. Carefully turn heat to low and allow mixture to simmer for another ½ hour. (Finished appetizer should have the tomato sauce.) This dish may also be served as a vegetable or a sauce over noodles.
