450 grams Plum tomatoes; seeded, diced
1 small Red onion; diced
8 Basil leaves; torn
2 tablespoons Chopped fresh flat-leaf parsley
1 Garlic clove; crushed
4 tablespoons Extra virgin olive oil
1 tablespoon Balsamic vinegar
Salt and freshly ground black pepper
Fresh thyme leaves; to garnish

Directions

1 Place all the ingredients in a non-metallic bowl and stir until well combined. Season to taste and garnish with the thyme leaves to serve.
