Tomatoes with fresh herbs and spiced vinaigrette

Ingredients

Quantity Ingredient
3 tablespoons Balsamic vinegar
2 tablespoons Lime juice
1 tablespoon Hungarian sweet paprika
pounds Tomatoes use red, green and yellow if possible
1 teaspoon Curry powder
½ teaspoon Chili powder
½ cup Olive oil
2 tablespoons Chives, chopped or green onions (opt)
Basil and cilantro leaves

Directions

VINAIGRETTE

TOMATOES

Combine first 5 ingredients in small bowl. Gradually whisk in oil.

SEason with salt and pepper.

Overlap tomatoes on platter. Spoon dressing over. Top with chives or green onions if desired. Garnish with basil and cilantro leaves.
