Tomato and balsamic vinaigrette

4 larges Ripe tomatoes; see * Note
½ cup Minced onion
1 tablespoon Basil chiffonade
3 ounces Twelve-year-old balsamic vinegar
Splash Olive oil; optional - to taste
Salt; to taste
Freshly-ground black pepper; to taste

Directions

* Note: The tomatoes may be charred on the grilled for a different flavor if desired.

Seed and mince the tomatoes, add the onions, basil and vinegar. Season to taste with salt and freshly-ground pepper. Serve over grilled fish. This recipe yields ?? cups of vinaigrette.
