Tuna and egg loaf

Ingredients

Quantity Ingredient
1 (14 oz.) can light tuna, drained
2 Hard-cooked eggs, finely chopped
¼ cup Mayonnaise
1 cup Fresh bread crumbs
3 Green onions with tops, finely chopped
1 tablespoon Capers, rinsed and drained
1 tablespoon Finely chopped flat-leaf parsley
Salt and fresh ground pepper

Directions

Preheat oven to 350øF. Grease an 8x4 inch loaf pan. Bread up tuna into small pieces. Combine tuna, eggs, mayonnaise, bread crumbs, green onions, capers, parsley, salt, and pepper in a medium-size bowl.

Transfer mixture to loaf pan and smooth top.

Bake about 40 minutes or until loaf is browned. Let cool in pan 10 minutes. Makes 4 servings. Typed in MMFormat by cjhartlin@...
