Tuna egg salad

Ingredients

Quantity Ingredient
1 each Hard-boiled egg -- chopped
1 can Tuna in water -- 3 oz
Drained and flakes
¼ cup Chopped celery
¼ cup Sweet pickles -- chopped
3 tablespoons Light mayonnaise
2 teaspoons Mustard -- prepared

Directions

Combine all of the ingredients in a small bowl and mix well. Spoon into tomatoes use as sandwich filling or serve with crackers. Yield: 3 serving. (1½ cups) Diabetic Exchanges: one serving equal 1 ½ meat, 1 vegetable: also 129 calories, 396 mg sodium, 86 gm cholesterol, 7 gm carbohydrate, 11 gm protein, 6 gm fat.
