Tuna chilli

Ingredients

1 tablespoon Olive or sunflower oil
1 small Onion; chopped finely
125 grams Mushrooms; sliced (4oz)
1 teaspoon Hot chilli powder; or to taste (1 to 2)
1 teaspoon Cumin
1 teaspoon Mixed dried herbs
1 397 gram can chopped tomatoes; (14oz)
1 198 gram can tuna in water; drained (7oz)
1 208 gram can kidney beans in water; drained (7oz)
1 198 gram can sweetcorn; drained (7oz)
Salt and pepper

Directions

Heat the oil in a large saucepan and gently cook the onion and mushrooms for 3-4 minutes. Stir in the chilli powder, cumin and herbs.

Add the remaining ingredients and season to taste. Bring to the boil, cover and simmer for 15-20 minutes.
