Turkey nachos

Ingredients

16 | ounces | Can refried beans |
1 | teaspoon | Chili powder |
1 | teaspoon | Ground cumin |
2 | tablespoons | Vegetable oil |
1 | pounds | Turkey breast, cooked, chopped |
½ | cup | Onion, diced |
4 | ounces | Green chili pepper, diced |
2 | tablespoons | Fresh cilantro, chopped |
1 | teaspoon | Salt |
½ | teaspoon | Pepper |
1 | cup | Tomatoes, finely chopped |
10½ | ounce | Bag nacho chips |
2 | cups | Shredded monterey jack cheese |
Directions
Combine beans, chili powder and cumin, heating through.
Heat oil in a skillet. Add turkey, onion, chilies, cilantro, salt and pepper. Cook, stirring occassionally, until onion is tender. Remove from heat and stir in tomato.
Preheat oven to 425. Spread about 1 teaspoon of bean mixture over each chip . Place in a single layer ona greased baking sheet. Spoon about 1 tablesppon of turkey mixture on top of each chip.
Sprinkle cheese evenly over turkey. Bake 5 minutes, or till cheese is melted . Serve immediately
