Vegetable pork stir-fry

¾ | pounds | Pork tenderloin, cut in strips |
1 | tablespoon | Vegetable oil |
1½ | cup | Mushrooms, fresh, sliced |
1 | large | Green bell pepper, cut in strips |
1 | Zucchini, thinly sliced | |
2 | Celery stalks, diagonally sliced | |
1 | cup | Carrots, thinly sliced |
1 | Garlic clove, minced | |
1 | cup | Chicken broth |
2 | tablespoons | Soy sauce |
1½ | tablespoon | Cornstarch |
3 | cups | Hot cooked rice |
Directions
Brown pork strips in oil in wok or large skillet over high heat. Push meat to side of wok or skillet; add vegetables. Stir-fry vegetables approximately 3 minutes. Combine broth, soy sauce, and cornstarch; add to wok or skillet and cook until clear and thickened. Serve over hot rice.
