Wake-ewa (black eyed beans with sauce)

2 | cups | Black eyed peas; soaked & cooked |
1 | large | Onion |
4 | tablespoons | Oil |
1 | teaspoon | Chili powder |
1 | teaspoon | Coriander; ground |
1 | teaspoon | Thyme; dried |
3 | Tomatoes; chopped | |
1 | teaspoon | Sugar Salt |
Directions
1. First cut the onion in half. Grate 1 half then slice the rest finely. 2. Warm the oil in a pan and soften the onion slcies in it.
3. Meanwhile, combine the grated onion, chili, coriander and thyme in a bowl with the tomatoes and add this to the cooked onion slices.
Contniue to cook the mixture gently for 10-15 minutes, stirring constantly. 4. After this put in the cooked black eyed peas, mash them a little and then add sugar and salt. Mix everything well and cook for 5-10 minutes to heat all the ingredients before serving with salad and rice or fufu (cassava mash).
