Walt's favorite chili & beans

Ingredients

2 | pounds | Coarse ground beef |
2 | Onions -- sliced | |
2 | Cloves Garlic -- minced | |
½ | cup | Chopped celery |
1 | teaspoon | Chili powder, or to taste |
1 | teaspoon | Paprika |
1 | teaspoon | Dry mustard |
1 | large | Can solid pack tomatoes |
Salt to taste | ||
2 | pounds | Dry pink beans |
Directions
For a spicier chili, add a pinch of the following: coriander, tumeric, chili seeds, fennel, cloves, cinnamon, dry ginger, small yellow Mexican chili pepper.
Soak beans overnight in cold water. Drain. Add water to cover 2" over beans and simmer with onions until tender (about 4 hours). Meanwhile, prepare sauce by browning meat and minced garlic in oil. Add remaining ingredients and simmer 1 hour. When beans are tender, add sauce and simmer ½ hour more. Serves 6-8.
